Black Bean Sliders
Ingredients:
BLACK BEAN PATTIES
- 4 tablespoons olive oil, divided
- 1 onion, finely chopped
- 1 15 ounce can black beans, rinsed and drained
- 1/2 cup cornmeal
- 1/2 cup almond meal (you can use breadcrumbs here as well)
- 1 tablespoon chili powder
- 1 teaspoon sea salt
- 1/4 cup water
MANGO SAUCE
- 1 mango, peeled and cut
- 1/2 cup sun dried tomatoes, whole or sliced
- 1 garlic clove
- 1 tablespoon white or apple cider vinegar
- 1/8 teaspoon sea salt
GUACAMOLE
- 3 avocados
- 2 tablespoons lime or lemon juice
- 1/4 cup salsa
- sea salt
- pepper
INSTRUCTIONS
1. In a large nonstick skillet, heat 2 tablespoons oil over medium heat. Add onions and let cook until tender and slightly caramelized, about 20 minutes. Move onions to a large mixing bowl and set aside skillet for later use. Add beans, cornmeal, almond meal, chili powder, salt, and water to the bowl. Use a masher (or spoon) to blend the ingredients together. If the mixture is too dry to hold together, add more water.
2. Using your hands, form the bean mixture into small sliders. If you are using buns, match the patties to fit your buns. In the reserved skillet, add 1 tablespoon of oil over medium-high heat, and pan-fry patties for about 3 minutes on each side, until lightly browned and crisp. Add more oil to the skillet as you finish the remaining patties.
3. MANGO SAUCE: Dice the garlic clove and combine all ingredients in a blender and blend until smooth.
4. GUACAMOLE: In a large bowl, mash together avocado and lime juice, then add salsa and season with salt and pepper to taste.
*A few notes: I am not a fan of cilantro but you can add to the Black Bean Patties (1/2 cup of chopped fresh cilantro), and to the Guacamole as well. I don't use slider buns with this recipe because I don't feel like it needs it, and #glutenismyenemy. Finally, I like my beans to be really mashed and I feel like it helps with holding the patties together, but you could probably just mix the ingredients together without mashing as well.
